Ingredients: Organic Arborio Rice, Dried Shitake Mushrooms, Organic Dehydrated Onion, Salt, Garlic Powder, Onion Powder, Saffron, Thyme

You will also need: ed: 2 tbsp olive oil and ¼ cup white wine

Optional: vegan butter and grated vegan cheese


Preparation: Add contents to a pot with 2 tbsp (30 mL) olive oil. Over medium heat, stir the rice in the oil for about 30 seconds to coat it thoroughly in oil. Add ¼ cup white wine and stir until mostly evaporated. Add ½ cup water, heat to a gentle boil and cook, stirring continuously, until the liquid is almost all absorbed / evaporated. Repeat this step (adding ½ cup water each time) until rice is tender, about 25 minutes. Stir in vegan butter and grated cheese, to taste. Makes 3 ½ cups.
