Ingredients: Long Grain White Rice, Dehydrated Black Beans, Tomato, Bell Peppers, Onion, Spices, Salt, Tomato Powder

You will also need: vegetable oil


Preparation: Add all contents to a pot with 1 tbsp (15 mL) vegetable oil and 2 ½ cups water. Bring to a boil then cover and simmer for 20 min. Remove from heat and let stand, covered, for 5 minutes before serving. If desired, garnish with sliced avocado, grated Monterey Jack or vegan cheese and a wedge of lime on the side. Makes 3 ½ cups.
