Vegetarian paella

Serves 4



  • 2 tbsp (30 ml) Savvy Pantry Spanish Sazon seasoning mix

  • 45 ml (3 tbsp.) olive oil

  • 1 1/2 cups short grain white rice (arborio)

  • 1/2 cup white wine

  • 2 1/2 cups water

  • 1 yellow onion, diced

  • 1 red pepper, seeded and sliced

  • 1/2 cup green beans or asparagus

  • 1/4 cup green peas, defrosted

  • 1 lemon, cut into quarters

  • chopped parsley, for garnish



  1. In a paella pan or in a large non-stick skillet add the oil, onion and bell pepper. Cook for 2 minutes while stirring.

  2. Add the rice and mix well. Add the white wine and cook for 1 minute. Add the water, bring to a boil, cover, and reduce heat to medium low. Simmer 10 minutes without stirring.

  3. Arrange the green beans (or asparagus) on top of the rice. Cover again, and simmer for 10 minutes or until the rice is cooked but still firm and the liquid is almost all absorbed.

  4. Add the peas, cover and let sit for 3 minutes.

  5. Serve with lemon wedges and chopped parsley.
