Thai Tofu and Vegetable Skewers



Makes 4 skewers


Ingredients:

  • 1 tbsp vegetable oil

  • 1 tsp Savvy Pantry Thai seasoning mixture

  • Juice of 1 lime

  • 1 zucchini, sliced

  • ½ Chinese eggplant or 1/8 Italian eggplant

  • yellow pepper, cut into squares

  • ½ package firm tofu, cut in 1-in squares

  • Fresh coriander, chopped


Preparation:

  1. In a large bowl, mix together the oil, seasoning mixture, lime juice and coriander.

  2. Toss the vegetables and tofu in the bowl and let marinate for 30 minutes.

  3. Preheat barbecue to 300 ºF.

  4. Put together the skewers.

  5. Place skewers on grill and cook, covered for about 15 minutes, turning once.
