Summer quinoa salad with fresh greens

Serves 4


For the quinoa:

  • 3/4 cup quinoa

  • 1 tbsp Savvy Pantry vegetable bouillon powder

  • 1 cup water

For the vinaigrette:

  • juice from 1 fresh lemon

  • 3 tbsp olive oil

  • 1/4 tsp cumin

In the salad:

  • fresh mixed greens / baby spinach / arugula

  • other vegetables, such as: avocado, artichoke hearts, olives, cherry tomatoes, apple slices


  1. Rinse quinoa and drain.

  2. In a pot, combine the rinsed quinoa, bouillon powder and water. Mix well.

  3. Bring to a boil, then cover and simmer over low heat for 15 minutes.

  4. Let cool for an hour or overnight.

  5. Prepare the vinaigrette by mixing together the olive oil, lemon juice and cumin.

  6. Prepare and cut up the vegetables.

  7. Mix together the quinoa, vegetables and the vinaigrette.
