Spanish style oven-roasted tomatoes
These tomatoes literally take 3 minutes to prepare (and 30 minutes in the oven). They make an incredibly flavourful - and gorgeous - side dish. Add some vegan cheese on top and presto : a main course!
3-4 large tomatoes (any variety, but not Roma)
2 tbsp olive oil
1 tbsp Savvy Pantry Spanish Sazon seasoning mix
Optional: vegan cheese (use feta style or goat cheese style for best results)
Freshly chopped parsley for garnish
Preheat oven to 400 degrees.
Slice tomatoes in half, horizontally and lay cut-side up on a baking tray.
In a small dish, mix together the olive oil and the seasoning mix. Drizzle half of the oil and seasoning mixture onto the top of the tomatoes.
Lay a slice of goat-cheese style vegan cheese or crumble some feta-style vegan cheese on top of each tomato half, then drizzle the remaining oil and seasoning mixture over the top.
Bake for 30 minutes.
Garnish with chopped parsley.
