Moroccan Vegetable Tagine


Serves 4


INGREDIENTS:

  • 2 tbsp Savvy Pantry Moroccan Spice seasoning mix

  • 3 tbsp olive oil

  • 1 sweet potato, peeled and cubed

  • 1 small turnip, peeled and cubed

  • 1 zucchini, sliced

  • 1 carrot, peeled and sliced

  • 6 dried apricots

  • Small handful of sultana raisins

  • 1 can chickpeas, drained

  • Freshly chopped cilantro for garnish


PREPARATION:

  1. In a large pot, mix oil and seasoning mix and heat for 20 seconds.

  2. Add sweet potato, turnip, zucchini, carrot, apricots, raisins and 1 cup of water.

  3. Bring to boil, then reduce heat to low.

  4. Cover and simmer for 30 minutes or until vegetables are tender.

  5. Add chickpeas and heat for 2 more minutes.
