Moroccan Vegetable Tagine

Serves 4
INGREDIENTS:
2 tbsp Savvy Pantry Moroccan Spice seasoning mix
3 tbsp olive oil
1 sweet potato, peeled and cubed
1 small turnip, peeled and cubed
1 zucchini, sliced
1 carrot, peeled and sliced
6 dried apricots
Small handful of sultana raisins
1 can chickpeas, drained
Freshly chopped cilantro for garnish
PREPARATION:
In a large pot, mix oil and seasoning mix and heat for 20 seconds.
Add sweet potato, turnip, zucchini, carrot, apricots, raisins and 1 cup of water.
Bring to boil, then reduce heat to low.
Cover and simmer for 30 minutes or until vegetables are tender.
Add chickpeas and heat for 2 more minutes.
