Misir wat (Ethiopian spiced red lentils)


Serves 4


INGREDIENTS

  • 20 mL (1 tbsp + 1 tsp) Savvy Pantry Berbere spice mix

  • 1 cup red lentils

  • ½ onion, finely chopped

  • 1 clove garlic, minced

  • 2 tomatoes, seeded and finely chopped or 2 tbsp tomato paste

  • ½ tsp salt, or to taste


PREPARATION

  1. Add 30 ml vegetable oil, garlic and the chopped onions to a pot, fry onions for 5 minutes.

  2. Add tomato (or tomato paste), salt and the spice mix and cook for 2 minutes.

  3. Add lentils and 3 cups water.

  4. Bring to boil then cover, turn heat to low and cook for 20 min.
