Misir wat (Ethiopian spiced red lentils)

Serves 4
INGREDIENTS
20 mL (1 tbsp + 1 tsp) Savvy Pantry Berbere spice mix
1 cup red lentils
½ onion, finely chopped
1 clove garlic, minced
2 tomatoes, seeded and finely chopped or 2 tbsp tomato paste
½ tsp salt, or to taste
PREPARATION
Add 30 ml vegetable oil, garlic and the chopped onions to a pot, fry onions for 5 minutes.
Add tomato (or tomato paste), salt and the spice mix and cook for 2 minutes.
Add lentils and 3 cups water.
Bring to boil then cover, turn heat to low and cook for 20 min.
