Marinated tofu burgers with chipotle-lime vegan mayonnaise

Makes 4 burgers
For the tofu burgers:
INGREDIENTS
1 package medium tofu, drained
1 tbsp olive oil
1 tsp Savvy Pantry Chipotle seasoning mix
Juice from ¼ lime
PREPARATION
Mix together the oil, lime juice and seasoning mix.
Cut tofu into burger-sized slices and marinate in the sauce for 30 minutes.
Preheat BBQ to 400 ºF.
Set the burgers on the grill, cover and cook for 5 minutes. Flip the burgers then cover the BBQ again and cook another 5 minutes.
For the chipotle-lime mayonnaise:
INGREDIENTS
2 tbsp aquafaba (the liquid from a can of chickpeas)
1 1/2 tsp apple cider vinegar
1/4 tsp dijon mustard
1/8 to 1/4 tsp salt
1 1/2 tsp lime juice
1 large clove garlic, minced
1/2 cup olive oil
1 tbsp Savvy Pantry Chipotle seasoning mix
PREPARATION
Combine the garlic, aquafaba, cider vinegar, mustard and salt in a deep mug or high-sided mixing cup (to prevent splashing).
Mix with a hand blender.
Very slowly pour in the olive oil while continuously blending. The sauce will thicken to the consistency of mayonnaise. [If you add the oil in too quickly the mixture will be runny and will not be recoverable.]
Finally, mix in the lime juice and the seasoning mix with a spoon and refrigerate until ready to use.
