Jamaican Jerk Tofu Bowl


Serves 4


INGREDIENTS


For the tofu:

  • 1 package firm tofu, crumbled

  • 2 tbsp olive oil

  • ½ onion, diced

  • 1 clove garlic, minced

  • 2 tbsp Savvy Pantry Jamaican Jerk spice mix

  • ½ tsp salt

  • 1 tsp cane sugar

  • Juice of 1 lime


For the rice:

  • 1 cup brown or white rice

  • ½ cup coconut milk (optional)

  • Pinch of salt


Toppings:

  • Pineapple chunks

  • Red kidney beans, drained, rinsed and heated in the microwave


PREPARATION

  1. To make the rice, bring 2 cups water (or 1 ½ cups water and ½ cup coconut milk) to a boil and add the rice and salt. Cover and cook over low heat for 20 minutes (for white rice) or 30 minutes (for brown rice).

  2. Meanwhile, gently fry the onion, garlic and spice mix in oil for 5 minutes.

  3. Add the tofu, salt, sugar and the lime juice and stir well. Cover and cook for 10 minutes.

  4. Assemble the bowl and serve.
