Jamaican Jerk Jackfruit Tacos
Makes 6 tacos
For the jackfruit:
2 tsp Savvy Pantry Jamaican Jerk spice mix
2 cans jackfruit, drained and rinsed
3 tbsp vegetable oil
½ onion, finely chopped
2 cloves garlic, minced
1/2 inch fresh ginger, minced or grated
1 tbsp tomato paste
1 tbsp cane sugar
¾ tsp salt
Juice of 1 lime
To assemble the tacos:
6 corn tortillas warmed in a skillet
1 ripe avocado, sliced
1 ripe mango, peeled and sliced
vegan mayo, sour cream, or other creamy dressing (optional)
Drain and rinse the jackfruit. Shred the jackfruit with your fingers, and cut up any harder pieces into small pieces. Set aside.
Heat the oil in a pan and gently fry the onion, garlic and ginger until soft (around 5 minutes).
Add the jackfruit, spice mix, tomato paste, sugar, salt and lime juice, then cover and let simmer 15 minutes, stirring occasionally.
To serve, take each corn tortilla and fill it with a large scoop of Jamaican jerk jackfruit. Top with sliced avocado and mango, cilantro and sauce if desired.
