Chipotle-lime corn on the cob


Makes enough for 6 cobs of corn


INGREDIENTS

  • 6 cobs of corn

  • 1 tbsp olive oil

  • 1 tsp Savvy Pantry Chipotle seasoning mix

  • Juice from ¼ lime


PREPARATION

  1. Mix together the oil, lime juice and seasoning mix to make a thick sauce.

  2. Bring a large pot of water to boil. Add corn and cook in boiling water for 3 minutes.

  3. Remove to a plate and brush with the sauce (keep the remaining sauce for after).

  4. Optional: Set directly on the grill of a preheated BBQ, cover and cook until some of the kernels begin to blacken, about 10 minutes. Turn once during cooking.

  5. Brush with the remaining sauce and serve hot.
