Chipotle-lime corn on the cob
Makes enough for 6 cobs of corn
6 cobs of corn
1 tbsp olive oil
1 tsp Savvy Pantry Chipotle seasoning mix
Juice from ¼ lime
Mix together the oil, lime juice and seasoning mix to make a thick sauce.
Bring a large pot of water to boil. Add corn and cook in boiling water for 3 minutes.
Remove to a plate and brush with the sauce (keep the remaining sauce for after).
Optional: Set directly on the grill of a preheated BBQ, cover and cook until some of the kernels begin to blacken, about 10 minutes. Turn once during cooking.
Brush with the remaining sauce and serve hot.
