Chipotle grilled portobello tacos
Makes 4 tacos
1 tbsp olive oil
1 tsp Savvy Pantry Chipotle seasoning mix
2 large portobello mushrooms
1 tsp maple syrup
4 small corn tortillas
For garnish: thinly sliced red cabbage and chopped fresh coriander
Mix together the oil, maple syrup and seasoning mix.
Rub the mushrooms in the sauce so that they are covered with it.
Cook the mushrooms on the barbecue (medium heat) about 10 minutes, turning once during cooking.
Slice the cooked mushrooms.
Heat the tortillas in a pan.
In each tortilla, place sliced mushrooms, cabbage and coriander.
